Cookout recipe

Over the past year I've been obsessed w cooking and have found some great recipes from family and friends!
We are having some friends over tonight and I made my favorite dip so I thought I would share!







Mexican corn dip:
1 cup light mayo (trying to be good w the light!)
1 cup sour cream
2 cans rotel (drained)
2 cans mexi-corn (drained)
Chopped green onions(optional)
Mexican shredded cheese (half a bag)

Mix all together, chill for an hour and serve!

It's great with frito dips or tostitos!

TGIF

What a week it's been after being on a week long vacation, I am already ready for another vacation! Life at work is nuts so I'm excited for the weekend ahead..especially a three day one!
My good friend, Kristin, is having her bachelorette party this weekend in Vegas and unforunately I'm missing out! I just couldn't do it with money and being gone all the time. So we are making it up and having a bachelorette dinner with some girls in KC soon. Hope you girls have so much fun without me!
We are laying low this weekend (surprising i know!).. On Friday we are having a cookout with our friends, Lucas and Amanda and then Saturday we are "partying like we are in college" with Dane and Sara :)
It's been a LONG time where we all went out and acted like we were in college on a Saturday night.. I already see a hangover in our future! I just can't hang like I could three years ago!
Other than that.. we are spending time together and playing with our new phones (They came in tonight!!!).. bring on the weekend!

We gave in....


Yep, that's right! Josh and I FINALLY gave in and ordered one of these bad boys...

We both have phones through work and it's free.. well for the iphone they charge you a little a month so i kept saying no (since we have it for free now!) but we just couldn't take it anymore.. we HAD to have the iphone :) We both have never had an apple phone so it will be FUN!
It was ordered yesterday so hopefully we will get it by next week (takes time since it's through work). I am SO pumped.. I know I will be addicted as soon as i get it.
One of the biggest reasons I finally gave in is my niece.. yes i know i'm obsessed. BUT my sister in law just got the iphone and can now skype from it! So of course Aunt Amber HAD to have it for skyping with her. I live 4 hours away :) Besides, my nephew and Mason, my friends baby, will grow way too fast and I just can't miss anything!

Napa/Yosemite/San Fran Vacation!

Boy how time flies! I can’t believe we are already home and back to work after our 10 day vacation! After 250 unread emails today I need a break from work so I thought I’d write about our vacation. So I'll just start with day one.. hope you have a few minutes to read :)
On Friday night, the 19th, we went to our friends, Nick and Amanda’s, wedding in Napa Valley. It was our first day in Napa Valley and it was incredible. Their wedding was gorgeous and SO much fun! It was beautiful outside, perfect weather, at a winery garden and the best food. I can’t say enough about how much fun it was! So that was a fantastic start to our vacation!

At the wedding they had cucumber gin drinks, which is Josh's favorite thing.. so needless to say, Mr. Mead had a GREAT time! He was a dancing machine.. which if you know my husband you know that he is usually a sidelines type of guy (while I'm the drinking, dancing fool). As you can see in the picture, he enjoyed himself:

On Saturday we hung out with 15 people from the wedding and visited two wineries and then went to a great dinner. The first winery was Sterling. It was a great one to start at – it was up on a hill that you took a gondola to. It was a huge building with a lookout deck that was perfect for all of us. The views were spectacular!


After Sterling we went to Castello de Amorosa. It was a winery that was a castle.. yes a castle! AMAZING! It was only build 5 years ago but the builder had visited castles all around the world and took pieces of their design to design this castle in Napa. It looked like it was hundreds of years old so that was amazing.


After that we went to a yummy dinner and then passed out! We were all worn out from the past two days. One of the best parts of CA is the fresh seafood! Dinner was always amazing no matter where we ate. I think I had my favorite (lobster bisque and salmon) about 8 times during this vacation.
On Sunday we took the Napa Valley Wine Train. If you ever go to Napa Valley this is a most go to!! It was amazing. It’s a 5 hour train ride that takes you all around Napa Valley while you enjoy a 5 course meal and bottle of wine. The top of the train was glass so the scenario was amazing.
After the wine train we visited Artesa winery. They had great wine and views as well. (See a trend?!) So all in all you just need to visit Napa if you love wine!

Our last day in Napa we took a hot air balloon ride over Napa Valley! It was the best experience. It was so relaxing, exciting, and gorgeous, once in a lifetime experience! I have many pictures of it and a few videos on our picture website!



We also went to three wineries – V. Sattui, Alpha Omega and Robert Mondavi. All of these were amazing! My brother kept telling me we HAD to go to V.Sattui for the food/wine pairing. And I’m really glad we listened to him, it was amazing!! The food was really good and was fun to have food pairing with the wine tasting.

I never thought I’d say it but after the few days in Napa I did not want another glass of wine for awhile! On Tuesday we headed to Yosemite National Park. We spent two days there hiking around and sightseeing. It is SO pretty there! I have a new camera so I enjoyed playing with it while taking all the pretty scenery pictures! We are not quite the “outdoorsmen” family so two days was great. Plenty of time to see everything but not an overload.


On Friday and Saturday we spent our time in San Fran! We stayed at Fisherman’s Wharf. It was perfect – close to everything we wanted to see and we walked everywhere. It was a total tourist trap and we loved every minute of it! We went to the piers and walked around, saw all the sealions on pier 39, visited the aquarium on pier 39, ate fresh seafood on the pier and of course visited the famous Ghiradardelli chocolate factory. Which of course we bought lots of souvenirs from.. white chocolate, milk chocolate with nuts, milk chocolate with mint.. and the list goes on!
On Saturday we went on a catamaran boat and toured around Alcatraz island and the Golden Gate Bridge. We went right under the bridge which was incredible. It is HUGE, I mean I knew it was going to be big but wow, this bridge is breathtaking big! It was very cool, although it was freezing!! It was only 60 degrees in San Fran while we were there and when you’re close to the water it was even colder so I of course was freezing my butt off!

So overall, it was an ideal vacation and a great time with my hubby. I can’t believe in 2 weeks it has been an entire year since we got married! It has gone by SO fast and has been so awesome.

When we got home we got wonderful news as well – my good friend, Kindall and Andy, had their baby!!! Mason was born this weekend and just precious. I can’t wait to cuddle with that lil booger! It’s the first baby in our group of best friends so it’s super exciting! Congrats to the Donehues :)
